Caribbean-Style Spice Rub

Here is an easy recipe for a caribbean style spice rub. Perfect for tossing boneless, skinless chicken breasts in and baking. Its pretty hot, so adjust the cayenne to taste.

1/2 cup finely ground roasted peanuts (I toss them in a mini-food processor and grind them)
1/2 cup packed light brown sugar
1 tablespoon kosher salt (if you are not using Kosher salt yet, you should be)
2 1/4 teaspoons cayenne
1/2 teaspoon plus a pinch ground bay leaf
1/2 teaspoon plus a pinch ground cloves
1/2 teaspoon plus a pinch ground nutmeg
1/2 teaspoon plus a pinch ground cinnamon

Toss everything to combine, and enjoy. You can make a bunch and keep it in a tupperware or other container forever.
